Dear Jeroen: To the best of my knowledge, there is no real textbook on DEP. There is, of course, Herb Pohl's original classic, entitled: "Dielectrophoresis" (Cambridge, 1978) which has lots and lots of experimental work. But may I also humbly suggest your taking a look at my book entitled "Electromechanics of Particles" (Cambridge, 1995)? This monograph provides a general treatment of how particles behave in electric fields and magnetic fields. Chapter 3 covers DEP.
