Cartwheel, a bioinformatics toolkit:

Collar, a submission and review management system for conference papers:

Neither of these are released yet, but both use Quixote for all their Web
interaction; Cartwheel is on the verge of an alpha release (really, I swear!)
and collar will be officially released sometime in December, I hope.  Both
are available through SourceForge, and are in use.

BTW, Quixote is the most natural Web platform I've ever used... nice job!

p.s. One thing that might add a lot to Quixote's appeal is a 1.0 release.
